Pork Belly Fried in Duck Fat

All the kids came over for Father’s Day with the exception of Zach. We are going to be in Port Charlotte this week for a dentist appointment so we’ll be celebrating Father’s Day with him then. Justin cooked burgers for us that consisted of Pork Belly fried in Duck Fat and served over ground beef and caramelized onions. It was DELICIOUS! Sssshhh! Don’t tell our cardiologist!

We had a great time swimming and watching movies together. It’s been cloudy for a few days so the pool was actually a bit chilly and you can bet we’re keeping an eye on that disturbed weather in the Caribean. We’re supposed to have rain for the next three days. Hope the roof repair holds up!!

This week is also Mason’s 6th birthday! He is SO excited! He asked for a Kermit the Frog, a Thomas the Train Pez Dispenser, and an Ironman mask. He is so easy to please. He also has two loose front teeth – his first ones!

This week’s Masonism:

Frank’s cat, Ollie, who is very cantankerous and mean to everybody except Frank, walked up to me in the kitchen and started meowing. I backed up and said to him, “I don’t know why you’re talking to me. Just don’t come any closer, okay?”

Mason, who was sitting at the table eating, swallowed a bite of his sandwich and said, “He’s saying he wants to scratch you.”
